Actually, from meridian,ms you would take I-59 southbound to slidell,la. Then leave slidell on I-10 westbound to kenner,la and take the exit to get onto hwy-90 westbound, that'll take you over to new iberia, then there should be an exit to enter the town(new iberia is located on the northside...
Slidell is actually southeast of me, so i'd be out of the way where i live, but i could meet you on the eastern side of the state in Meridian MS then you could go south on I-59 from there and that'll take you straight to slidell.

Yeah, I personally don't like dummy stacks and gasser stacks....gasser stacks don't sound right unless you got a hella long duration exhaust lobe on your cam.
I've been bouncing ideas around about doing stacks, I did them for shitz 'n gigs on my old 79 ford van back in the day, it had an old 460 I6 diesel non-turbo. The van had the step bumper, so I cut the holes for the stacks out of the step part at each end of bumper and ran the stacks straight...
