For me the fuel savings alone made the install of the V2 well worth the money. Add to that, the improved cooling and not worrying about overheating when pulling lots of weight make it high up on my list of worth while mods.
Your odometer readout is now displaying/logging about 4% less than it was with the 245's. I think if you use a GPS now, you will find that your only displaying/logging about 1% less than actual miles traveled with the 265's.
I use the following formula
axle weight / number of tires on axle X max air pressure / weight rating of tires used = min tire pressure required
ex:5000 lbs axle weight / 2 tires X 80 psi max air / 3042 rating of tire = 65.75 PSI min required.........

I pull a tri-axle GN and prefer it over the tandem duals I have hauled. Trailer frame sits wider and seems more stable when loading equipment etc. I find it easier to pull thru the field with a load of hay as well.

Just a guess but any more than .5" would be risky as you loose lug threads. The spacer would also need to be hub centric with a lip on it that would hold the outside rim hub centric, as the axle tapers at that point.
I ran 235 Uniroyal Laredos HD's without any rubbing unless loaded really heavy and hitting big bumps. I have since moved up to 265's with 2" spacers. I move to the 265's for a higher load rating on the tire.
