That's up to you. I don't like the burn of the marine bowls and injectors for the street. I would go back stock and raise compression slightly for more response on the street and less smoke.
What are your goals for this engine?
120-130 is low for having a .500 boost valve . Should be closer to 200 at full throttle. I think your problem is from to low of pressure for whatever reason. What all was done to transmission when it was out? Did it get any kind of shift kit?

I personally wouldn't trust someone so cheap. These type of companies usually cut corners very hard and use cheap parts and i have even seen places that never do any thing with pop pressures. They just put in a new cheap tip an clean the rest of the injector and send it back out the door. But...
