Yes been there done that. I have a couple customers that haul cars from PHX to Texas that go 60K between changes. Both running duel systems with eabp100's and eao26's.
Oil analysis always look great but to be safe and feel all warm and fuzzy inside we service them.
It has been well know the the LB7 had these injector problems. I have to say EVERY GM vehicle I have ever owned has had injector problems. You may consider the next set to be of aftermarket.

with the FS you will need to pickup oil I believe behind the full flow filter via a port in the block and either return it though the valve cover ot fill on top of the engine. The Amsoil Install is much easier.

You are correct. This is the exact reason why I hook up the head and lines first. The kits come with enough line that you can do about anything you want on the mounting location

I ,minda have to agree for the money the amsoil kit does an awesome job and is much less expensive. I'm not only saying this because i'm an amsoil dealer. We also sell oil guard, FS, and our own bypass kits also. IMO you get just as good of filtration with the amsoil kit and the spinon filters...
the LBZ is a very stable platform. The problems that the previous engine had seem to been worked out on the LBZ. IMO it's the best Mill yet and reliability is awesome.
Every shop like that has enviro fee's. but I feel it should be part of the cost upfront and bottom line number. I even stopped doing the shop supply charge awhile back. Just roll it into the cost of the entire job.
