For a gasoline racing engine the old rule of thumb was 10 psig per 1000 rpm, eg 30 psig for 3000 rpm up to about 70-80 psig, above that you had danger of spinning a cam bearing due to too much oil pressure. (Old school stuff)

I would check for a vacuum leak. Try spraying wd-40 or similar (Amsoil MP for instance:D) around the area where the carb is bolted on. If you have air bypassing the carb that could do it.
Your vis at 100C is well into the 50 weight range. Amsoil uses the same SAE viscosity rating guidelines for kinematic viscosity as everyone else. Generally, overheating a multi vis oil will cause a drop in Kinematic Vis numbers due to shearing down of viscosity improvers.
